Dark leafy kale salad with pink beetroot dressing & a nutty citrus topping

Veggies
- 6 cups finely shredded kale or spring greens
- 1 cup sweetcorn
Nutty salad topper
- half cup pistachios
- 1 garlic clove
- half teaspoon sea salt
- 1 zest of lemon
Dressing
- 1 lemon juiced
- 1 tsp wholegrain mustard
- 1 small fresh beetroot
- half cup apple cider vinegar
- 1 tsp date syrup or maple syrup
- 1 pinch Salt & pepper
- 1 garlic clove
- 2 tsp capers
- half cup olive oil
Pink onions cooked in fresh lime juice
- 1 red onion finely sliced
- 1 lime - juiced
Assemble salad
Add finely sliced greens to salad plate and sprinkle on sweetcorn and pink onions, drizzle over dressing, then sprinkle on nutty topping.
